Galettes have been on my list of to-do recipes. And I was pretty excited to try this recipe. What I liked most about the recipe, was the ease. Very few ingredients and very little prep.

Unfortunately, I did not get to actually taste. Blueberry vanilla galette’s do not go very well with an alkaline eating plan. I did taste a bit of the blueberry juice and I liked it. A little too sweet for my tastes, but that could be because I had not had any sugar for months at that point.

My taste testers though, thought it was perfect. The three of them gave the blueberry vanilla galette two big thumbs up.

So check out the recipe below.

Place the blueberries in a medium bowl and add the lemon zest.

Lemon juice,

granulated sugar,

and vanilla extract (although I used vanilla paste). Mix well.

Unroll the pie dough onto the parchment paper and spoon the blueberries onto the center of the dough.

Roll the dough over the blueberries.

Brush the dough with the egg wash.

Sprinkle vanilla sugar over the egg wash.

Bake for 20 to 25 minuets until golden brown.

Blueberry Vanilla Galette

Ingredients
  

  • 10 oz fresh blueberries
  • 1 pie crust store-bought
  • 1 tsp fresh lemon juice plus zest from half a lemon
  • 1+ teaspoon vanilla extract
  • 1/4 cup white granulated sugar
  • 1 large egg for egg wash
  • Vanilla sugar for topping - optional optionally you can use granulated, Demerara or brown sugar

Instructions
 

  • Preheat the oven to 400 degrees and then line a baking sheet with parchment paper. Set aside.
  • In a medium mixing bowl, combine blueberries (be sure to rinse them first), granulated sugar, lemon juice, lemon zest and vanilla. Mix well and set aside.
  • Unroll the dough onto the parchment paper.
  • Mix the filling again. Spread the filling in the center of the dough, leaving about an inch space uncovered around the edges.
  • Fold edges of the dough up over the blueberries, pinching the dough in the overlap areas. This will prevent the overlap area from coming apart. Optionally, you can brush some of the egg wash over the area to be overlapped. The egg wash acts like glue.
  • To get a really nice golden and shiny crust, beat 1 egg. Then brush the dough with the egg wash.
  • Sprinkle some vanilla sugar all over the folded edges of galettes.
  • Bake for 20-25 minutes or until the crust is golden.
