I come from a culture where protein is revered. By that I mean growing up we literally had protein for every meal. So it wasn’t until I became an adult and moved to the US that I found my love for vegetarian fare.

While I am not a vegetarian, I have continued to build my vegetarian recipe list, in the last few years. One of my favorite and a classic is a cucumber sandwich.

This version of cucumber sandwich was inspired by some that I saw on Pinterest a while back. I liked the idea of doing an open faced sandwich and creating a pattern with the cucumber slices. It looks beautiful when presented. I also cut them to be a perfect one bite of deliciousness and I tend to lean towards the classic version which is made with butter instead of cream cheese. But as I always recommend for most of my recipes, feel free to substitute certain things for a preferred flavor profile.

Wash the cucumbers in warm running water and dry. Then using a mandolin, slice them length wise.

Line them up on parchment paper.

Sprinkle with salt and allow to sit undisturbed for 10 to 15 minutes.

Meanwhile, butter all the slices of bread and set aside.

Once the resting period is done, gently pat dry with paper towels to remove excess moisture and salt.

Place the cucumbers on the bread slices diagonally, overlapping slightly.

Use your cookie cutter to cut the sandwiches.

One done.

Perfect for a single serve lunch. Although I will admit, I did also eat the cut offs. All together it was a perfect lunch.
